What is Matcha?
Matcha is a type of powdered green tea that has been used in traditional Japanese tea ceremonies for centuries. It is made from shade-grown tea leaves that are ground into a fine, bright green powder. Matcha has a unique flavor that is both earthy and slightly sweet, and it is known for its vibrant green color. Matcha is sensitive to humidity, light, and heat. To maintain the strong flavor and vivid green, it is better to use high-quality matcha.
Ingredients in Matcha French Toast

- Bread - The bread slices provide the base for the French toast Your choice of bread decides the main texture of the dish. I choose sourdough here for its chewiness and tanginess, and for the crispy crust.
- Egg - Eggs are used to create the custard-like coating for the bread. They provide structure, and a creamy but slightly firm interior texture for the French toast.
- Milk - Milk adds moisture to the French toast soak, ensuring that the bread absorbs the custard evenly.
- Heavy Cream - Heavy cream is not a traditional ingredient for French toast. I like to substitute it for part of the milk. It adds extra creaminess, and helps achieve the desired rich consistency.
- Sugar - Sugar provides sweetness to balance the sourdough’s tanginess. Adding sugar is completely optional. If the bread you choose is sweet already, feel free to cut the sugar here.
- Salt - A pinch of salt enhances the overall flavor by balancing sweetness and enhancing the other flavors in the dish.

How to make Matcha French Toast?
Make sure you have filling (Matcha Pastry Cream) and topping (Matcha Crème Anglaise) ready.

Mix the ingredients for French toast soak, including eggs, milk, heavy cream, sugar, salt. Blend it with a hand blender to get even mixture, and to get rid of egg white lumps.

Spread a thin layer of Matcha Pastry Cream in between two slices of your desirable bread.

Soak your bread in the mixture. The soaking time depends on the thickness and the type of bread you choose. More details in the Recipe Tips.

Pan fry it in a oiled pan. I use avocado oil spray and a nonstick pan.

Serve with Matcha Crème Anglaise (cold or hot).
Equipment
I use hand blender to mix and get rid of egg white lumps. This step is optional, but having a hand blender is definitely useful. And it can replace juicer, mixer, grinder, food processor if you are only dealing a small portion.
Recipe Tips
Choose your bread right! I usually choose sourdough or baguette for my French toast because I like the crust and the chewy texture of them. Sourdough can be soaked for over an hour, and the shape still stays whole. If you like buttery soft and extra custardy texture, go for brioche or loaf bread. They soak up faster and also take less time to cook.
Use vegetable oil to fry! Some recipes tell you to fry the French toast with butter. I never do that because the butter gets burned easily. Especially that today we are frying a filled thick French toast, you need enough frying time to cook the egg. If you really really want to add some buttery flavor, use half butter and half oil.
Sear every side! You love the crispy crust? Try to fry each side till golden if possible. Use a spatula to help flipping.

Recipe FAQ
Don’t worry too much. It’s normal if that happen, especially if you stuff a lot of Matcha Pastry Cream. The French toast soak recipe is good by itself, too. Pastry cream is just a bonus point!
I usually make more French toast with it on the next day. Another thing you can do is add some flour, and make it pancakes. It’s fine. I tried it.
